Makes approximately 60 biscuits
1/2 cup pure maple syrup
1 teaspoon bicarb soda
2 1/2 cups plain flour
2 cups rolled oats
1 cup brown sugar
1 1/2 cups shredded coconut
Preheat oven to 170C fan forced. Line baking trays with baking paper.
In a small saucepan, melt butter together with the maple syrup.
In a small bowl, combine the bicarb soda with 3 tablespoons of water. Stir until dissolved and then mix into the butter mix once all the butter has completed melted. The hot liquid will foam a little – don’t worry, this is supposed to happen.
In a large mixing bowl, combine all the remaining dry ingredients (flour, oats, sugar and coconut).
Make a well in the centre and then pour in melted butter mix.
Stir until everything comes together into a soft dough.
Roll into a small ball and then flatten onto baking trays.
Bake for 10 minutes or until golden brown.
Remove from oven and place biscuits immediately onto a rack to cool.
The biscuits should be crispy on the outside, and slightly chewy on the inside.
