120g butter, melted
1 3/4 cups caster sugar
2 eggs, lightly beaten
1/2 cup cocoa powder
1 can (400ml) coconut milk
1 can (375ml) evaporated milk
2 cups glutinous rice flour
1 tablespoon baking soda
Preheat oven to 170C, and line a baking tray (6″x13″) with non-stick baking paper.
In a large bowl, combine melted butter and sugar, then add in the eggs.
Stir in the cocoa powder, then the coconut milk and evaporated milk.
In another large bowl, sift the glutinous rice flour and baking soda.
Make a well in the flour, and pour in the wet mixture.
Stir well until the flour is incorporated.
Pass the combined mixture through a sieve to remove the lumps.
Quickly stir again and then pour into your lined baking tray.
Bake for 1 hour 20 minutes or until just firm.
Slice and enjoy!
