1 – 2 packets Savoiardi biscuits (sponge finger biscuits) – the amount you will need depends on the size of your dish.
500ml pouring cream
500g mixed berries (fresh is best, but frozen can be used also), cut into small, bite sized pieces
100g white chocolate, shaved
Use a clear glass dish, at least 3 inches deep.
Using a stand mixer, whisk the cream until stiff peaks (approx 1 minute on high).
Pour milk into a large bowl. Dip Savoiardi biscuits quickly in the milk and place in the bottom of the glass dish. Repeat until you have a layer of soaked biscuits in the dish.
Spread a layer of cream on top of the biscuits.
Scatter 1/3 of the berries on top of the cream.
Repeat with another layer of soaked biscuits, then the cream, then the berries.
Repeat again with the remaining soaked biscuits, then the cream, then the berries.
Sprinkle the shaved chocolate on top of the final layer of berries.
Refrigerate until ready to serve.
