1/2 cup sugar
125g butter, softened
1 1/4 cups flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon cinnamon
3/4 cup rolled oats
1 1/4 cups dried cranberries
Preheat oven to 160C. Place the sugar and butter in a bowl and beat until pale and fluffy. Add egg and beat until combined. Add the flour, bicarbonate of soda, cinnamon and oats to the mixture and mix by hand until the dry ingredients are incorporated. Add cranberries and mix.
Roll c. 2 tablespoons of the mixture into flat rounds and place them on a greased cookie sheet.
Bake for approximately 20 minutes for tray and cool.
Store cookies in an airtight container.
