125g softened, diced butter
1/2 cup brown sugar
1/2 cup golden syrup
2 1/2 cup self-raising flour
2 teaspoon ground ginger
1 teaspoon nutmeg
1 teaspoon of bicarbonate soda
dash of cinnamon
Preheat the oven to 190C and grease 2 cookie sheets.
Beat the butter and sugar together until light and fluffy. Then add the golden syrup and beat until combined.
Add sifted flour, ginger, nutmeg, bicarbonate soda and cinnamon to the mixture and fold together.
Once the mixture starts to come together, knead on a lightly floured surface.
Roll the dough to c. 5mm thick and cut into shapes.
Bake for 8 minutes per tray. Once removed from the oven, let cool and enjoy :)
