quinoa chocolate cake

2 cups cooked* quinoa
1/3 cup milk
4 eggs
1 teaspoon vanilla
3/4 cup unsalted butter, melted and cooled
1 cup white sugar
1/2 cup brown sugar
1 cup unsweetened cocoa
1.5 teaspoon baking powder
1/2 teaspoon bicarb soda
1/2 teaspoon salt

{*cook quinoa: place 2/3 cup washed quinoa + 1 1/3 cup water in a saucepan over medium heat; bring to the boil then turn heat to low; cover and simmer for approx 15mins until quinoa has absorbed water, then turn off heat and leave for 5 minutes; fluff with a fork; cool.}

Preheat oven to 350F / 150C. Grease 2 round / square 8″ pans.
Place sugars, cocoa, baking powder, soda and salt in a large bowl. Whisk to combine.
Combine milk, eggs and vanilla in a food processor.
Add quinoa and melted butter. Blend until smooth.
Add quinoa mixture to the dry ingredients and stir to mix well.
Transfer batter to pans and smooth tops with a spatula.
Bake for 40-45 minutes or until a knife or tester inserted in the centre comes out clean.
Remove from oven and cool completely in pans, sitting on a wire rack.
