double chocolate cookies

125g butter, softened
3/4 c. brown sugar
1/2c. sugar
1 teaspoon vanilla essence
2 eggs
40g melted dark chocolate
1 teaspoon baking powder
1 teaspoon salt
2c. flour
1/2 c. shredded coconut
1/2 c. chocolate chips

Melt the dark chocolate in a bowl over barely simmering water until just melted. Remove from heat and let cool for 5-10 minutes until the chocolate is not hot to touch.

By hand or with an electric mixer, cream the butter, brown sugar and sugar in a bowl. Add vanilla essence and eggs to the butter mixture. Then add the melted, cooled chocolate and mix. The mixture will be lumpy.

In a separate bowl, mix the baking powder, salt, flour and coconut. Fold into the butter mixture. Add chocolate chips.

Grease 2 cookie trays. Roll tablespoons of mixture into a ball shape and flatten to 1/2 cm by hand. The recipe should make approximately 24 cookies.

Bake at 140C for 12 – 15 minutes per tray.
