homemade granola

500 grams rolled oats (not instant)
100 grams sunflower seeds
150 grams natural almonds
2 teaspoons ground cinnamon
4 teaspoons mixed spice
1 teaspoon ground ginger
100 grams brown sugar
1 teaspoon salt
175 grams apple sauce / puree / compote
80 grams golden syrup
40 grams maple syrup
4 tablespoons honey
1 tablespoon vegetable oil
150 grams sultanas
150 grams other dried fruit

– Preheat oven to 170C.
– Mix all dry ingredients together in a large bowl (except for sultanas and dried fruit).
– Add wet ingredients then thoroughly mix together. 
(If you have kitchen scales, I put the bowl on top then weigh all ingredients into it for less cleanup.)
– Spread mixture into one or two baking trays. {I cover mine fully with foil then lightly spray with oil for less cleanup also.}
– Bake for 20 minutes then mix on tray, re-distributing evenly so the toasting is more even throughout. Bake for another 20 minutes or so until golden brown.
– Remove from oven and allow to cool completely. Mix in dried fruit. Store in an airtight container.
